Weatheroak Ostrich - Country Herb
By: Something different from pork, lamb and beef. Ostrich is one of those exotic meats such as kangaroo and crocodile which are creeping into our shops and farmers markets (see our news story on Randalls).
As with other game, the meat is low in fat, very healthy and because it has always worked hard is lean and firm. These sausages are surprisingly good, they have a strong ''''gamey'''' taste and are flavored with a hint of juniper. Not surprisingly they are pretty close to a (good) venison sausage. The meat is lean, I was warned to cook them gently for no more than 10 minutes. They lost very little bulk in the pan, are good hot and cold and are well suited to slow cooking in a casserole. They are pricey at nearly £10 per kilo but given the strong taste, minimal weight loss during cooking and novelty value, they are well worth a try.
