400g beef mince
150g beef or pork fat, cubed
2 cloves garlic, finely chopped
freshly ground black pepper
1 teaspoon sweet paprika
1/4 teaspoon chilli powder
1/4 teaspoon cinnamon stick, finely ground
1/4 teaspoon cloves, lightly toasted in a dry pan and finely ground
1 teaspoon thyme leaves
1 tablespoon roughly chopped flat-leafed parsley
1/4 cup ice
small sausage skins, soaked for 24 hours in several changes of cold water
