Mash with olive oil

Replace the usual butter with a fruity, green olive oil.

900 g potatoes
100 - 200 ml fruity green olive oil
100 g pitted green olives , finely chopped (optional)
1 clove of whole garlic (optional)
10 basil leaves, shredded (optional)
a few strips of lemon zest (optional)
Salt and black pepper


You will need to peel the potatoes if you are using the basic method or want to use garlic or lemon peel to flavour the potatoes as they cook. If so, peel the potatoes, cut them into large chinks and add any flavouring
Boil the potatoes until done, drain, discard any flavourings, return to the pan for a few minutes and mash
Add chopped olives and olive oil
Season to taste and serve hot
