Mash with roasted garlic

Shallots and garlic are first roasted and then combined with mash made with just butter.

900 g potatoes
1 large whole head of garlic
3 garlic cloves
6 shallots (in skins)
3 tablespoons butter
Olive oil for roasting
Salt and black pepper


Heat the oven to high (230C, gas mark 8), toss the garlic and shallots in a tablespoon of olive oil, add salt and pepper, wrap in foil and roast for 1 hour
Leave the garlic and shallots to cool, when they are ready unwrap, discard the skins and puree in a food processor
Peel the potatoes, cut into chunks and boil with 3 peeled garlic cloves
Drain and mash the potatoes, add the puree of garlic and shallots, butter and season
