A traditional Irish Halloween dish made with mash, cabbage and onions. Use whatever cabbage you want but best with savoy cabbage or kale.

900 g potatoes
450 g cabbage, cored and finely shredded
2 small leeks, finely sliced
150 ml milk
100 g butter
Salt and black pepper


Boil the potatoes until cooked, drain and return to the pan
Cook the cabbage for 2 - 3 minutes in salted boiling water until just cooked, drain, refresh under cold water, drain again
Put the milk and butter into a pan and bring to a simmer, add the chopped leek and simmer for 8 - 10 minutes
Mash the potatoes
Combine all of the ingredients and stir whilst reheating on a low heat
Season with salt and black pepper
