Like Colcannon this is a traditional Irish dish, it is mash made with lots of chopped spring onions. It is traditionally served piled on a dish with a well of butter in the middle. Everybody takes it in turn to take some mash and some of the molten, buttery centre.

900 g potatoes
Large bunch of spring onions, chopped
125 ml milk or double cream
100 g butter
Salt and black pepper


Cook the potatoes in boiling water
Simmer the milk and spring onions for five minutes
Drain potatoes and mash thoroughly, add hot milk, spring onions and half the butter
Season with salt and black pepper
Pile on to a plate, make a well in the middle and add the rest of the butter
