Sausage chilli

Most of us cook chilli with minced meat, normally beef and add spices. This recipe uses sausage meat which will already be spicy. The seasonings are for guidance, use whatever you fancy and adjust according to the sausage you are using.

450g spicy sausage meat
Large can of red kidney beans, drained
Large can of chopped tomatoes
Large onion, chopped
1 - 2 garlic cloves, minced
1 red pepper, deseeded and diced
2 teaspoons of chilli powder (the fresher the better)
1 bay leaf
1/2 teaspoon of cumin
Salt and black pepper

Optional extras

Sour cream (a small 142ml pot)
A small red onion, finely chopped
Fresh tomato, diced
Warm tortillas or wraps


Remove the sausage skins by slitting the skin and unwrapping the meat
Discard the skins and break up the meat (you may need to chop Chorizo)
Heat some olive oil in a large casserole, add the onion and cook for 5 minutes
Add the garlic and cook for a few minutes (be careful that the garlic does not burn)
Add the sausage meat and peppers, turn the heat up and cook until the meat is browned
Add the spices and herbs (or half the chilli powder if you are worried about the dish being too hot), stir well
Add the beans and tomatoes, cover and simmer for around 1 hour
Check seasoning and adjust if needed
Serve with rice or warmed tortillas
If you are using the accompaniments put these on the table for people to help themselves

Any spicy, meaty sausage - Cumberland, fresh Chorizo or Italian
